In the mood for a tropical treat? This piña colada mocktail is a super tasty non-alcoholic drink. Paleo, vegan, refined sugar-free.
A delicious, tropical drink the entire family can enjoy
I’m a huge fan of piña coladas. They used to be my favorite drink when I drank alcohol, but I’ve since cut it out due to numerous health issues.
I’ve still been craving that delicious combination of pineapple and coconut though, so I decided to try making a piña colada mocktail and it seriously did not disappoint!
What I like most about this recipe is how simple it really is to make. Plus it uses unsweetened coconut flakes and fresh pineapple. No canned cream of coconut or canned pineapple juice required!
I also decided that, because the homemade coconut milk is a bit light on coconut flavor, that I would add a bit of unrefined coconut oil, and it really helped to balance the ratio of coconut to pineapple!
Of course, as always, feel free to play with the ratio of ingredients to find that balance that you really like.
These piña colada mocktails are quite easy to make
For this recipe, you will need fresh pineapple, unsweetened coconut flakes, unrefined coconut oil, stevia if desired for additional sweetness, and ice.
First, you’ll need to make a batch of my homemade coconut milk, which will take you no more than 5 minutes. Of course, you’re welcome to use a can or carton of coconut milk, if you’d like. Just be sure it contains no added sugar, if that is a concern for you.
Next, you’ll want to chop up the pineapple into chunks, then add to the blender with the coconut milk, coconut oil, stevia and ice. Blend until smooth.
I definitely recommend consuming the piña colada mocktail right away, since it does not store well in the fridge or freezer due to the ice.
Can I make this into a juice, instead of a frozen drink?
You sure can! In fact, it would be even easier to make, since you can simply add the coconut flakes directly to the blender, rather than doing it beforehand. You’ll want to omit the ice as well. Then you can simply strain out the coconut flakes and leftover pineapple chunks all at once using a nut milk bag or a fine mesh strainer. The juice can be stored in the fridge for 1-2 days, since there is no ice involved.

Ingredients
- 2 cups homemade coconut milk, or store-bought linked below (16 oz)
- 2 tablespoons unrefined coconut oil or coconut butter
- 1/2 cup fresh pineapple cubes and/or juice
