I used to be a hardcore keto and paleo diet follower, but recently, I have realized my remaining symptoms are related to inflammation, so I am changing my diet to help with my current symptoms and improve my quality of life.
The status of my diet has recently shifted
Hey everyone! It has been quite awhile since I did one of these health updates. As you all know, my life has really been focused on finding the foods that feel right to my body. For a long time, that has been low-carb, Paleo type recipes. I feel that they have served me really well for some time, especially during my mold and Lyme disease journey.
Lately, my health has made a turn for the better. I’ve finally been climbing out of the deep dark hole that it feels like I’ve been stuck in for years, in terms of my health and mindset.
I’ve been feeling much better physically, but I’ve been having some alarming symptoms that I am still struggling with. These include terrible eye pain in my left eye at night, sinus problems and headaches. My research and self-experimentation seem to point to inflammation and gut dysbiosis (my doctor seems to think SIBO) as the issues I am struggling with.
I’ve still been reacting to a lot of foods that I used to be ok with, the most troubling being that I can’t seem to consume meat of any kind. I’ve also discovered lately that the majority of my remaining issues are related to cooking methods.
Anything that easily oxidizes or burns when cooked on high heat (meats, cheeses, cooking oils, or any food cooked at too high of a temperature) aggravate my symptoms. I also think I have a bit of a histamine issue happening as well, since vinegar and fermented foods seem to make things worse also.
What this means for my recipes
As a result, I will be shifting my diet around for as long as it serves me. I will be shifting back to a more plant-based diet, at least until my symptoms are relieved and my health returns fully.
I still do really resonate with a low-carb, Paleo diet, and so of course my recipes will still be leaning this way whenever it feels right. I will try to show low-carb and Paleo substitutions as often as I can, for those who are following one of those ways of eating.
However, I don’t feel that putting labels on my diet is the right approach for me at this time. I’m just trying to relieve some of my symptoms, which have been lowering my quality of life for some time now.
What I will be doing is eating almost entirely fresh foods from nature, along with some other foods as I see fit.
This means that there will be some shifts in my recipes, to reflect my diet changes. I don’t see the purpose in making recipes solely for my blog, and then throwing them out or giving them to others. This blog reflects my heart and soul, and I want to create recipes I am truly passionate about.
I have been resisting changing my diet for some time now, with the worry that my readers will not approve, but the truth is that managing low-carb and low-histamine simultaneously is just not feasible. I prioritize my health and healing above all else, so I know it’s time to be true to myself.
The bottom line here is that I think we can all get stuck sometimes in thinking that one specific way of eating is perfect for us forever. I was served incredibly well in my healing journey by eating low-carb and Paleo, that it has truly changed my life.
But we need to be honest with ourselves when something is no longer the right fit for us going forward, even if for a short period of time. I like to think, with my current knowledge at least, that I will be back to a low-carb and/or Paleo diet in the future. But the truth is, who knows? I’m along for this wild and crazy ride, wherever it takes me.

Thank you so fir posting your new adventure for histamine issues. I so would love to talk to you. Im 46 yrs old and have had allergies my whole life. Mold/dustmites/histamine and many more. I feel horrible every day. I’ve been to the drs. Numerous times and they really have no answers for me. Im miserable. After reading your info in certain that I have the same issues!
