Watermelon is the perfect summer fruit, why not enjoy it in as many ways as possible?
Watermelon has to be one of my favorite foods. It’s such a treat, and I actually love that it’s not available year-round. I feel that we’ve been so spoiled by foods that should be seasonal, but somehow still show up on our grocery shelves all the time, meaning that clearly they are flown incredible distances to get to us. It seems so unnatural to me.
During summer, I am always looking for fun new ways to use up the watermelons that I buy. These watermelon coconut popsicles are a cool way to do this, and I promise the entire family will want to participate in the fun.
Not only are they fun to make, but they are also ridiculously simple as well. They take no more than 5 minutes to assemble, and then you simply wait until they are frozen. They are probably ready within 12 hours or so, but I like to give them 24 hours, just to be sure. If you can wait that long!
These watermelon coconut popsicles couldn’t be easier to make.
To make these watermelon coconut popsicles, all you need to do is cut open a small watermelon. For this recipe, you’ll need approximately half of it. If there are seeds, try your best to remove them. I recommend using a seedless one, so you don’t have to worry about this step.
Add the watermelon to your blender, and pulse until liquified, approximately 30-60 seconds. Mix in coconut water, and stir to combine. Pour the mixture into popsicle molds, and then place in the freezer. It couldn’t be any easier.
I don’t like coconut, can I omit it?
You certainly can. These are just as delicious as straight watermelon popsicles as well!
How long do these stay good for in the freezer?
If you store the popsicles directly in the molds, then they should stay good for a long time, up to a month or even longer. If you remove them from the molds once frozen, they will get freezer burnt after awhile, so I would recommend using them up within a week or two.

Ingredients
- 1/2 small seedless watermelon
- 1 cup coconut water
Instructions
- To a blender, add the watermelon meat (remove the rind). Blend until the mix is liquified, approximately 60 seconds. Add in coconut water and mix to combine.
- Pour into popsicle molds and place in the freezer until solidified, which could take up to 24 hours.
