Microwave cinnamon roll for the win!
I know I can’t be the only one who LOVES cinnamon. It’s one of those flavors I just constantly crave. Not only do I always keep some on hand, but I often find myself using it in savory recipes as well.
So when I realized I didn’t have a cinnamon roll recipe (basically a travesty for a cinnamon lover), I knew it was time.
One thing that always bugged me about making cinnamon rolls is just how much time and effort they require. Plus you are stuck with 12-16 cinnamon rolls, and I know I can’t eat them fast enough before they go bad.
This microwave cinnamon roll is the perfect solution. If you just want one (or two), then this recipe has you covered! You can make one jumbo cinnamon roll, or two medium sized ones with this recipe, simply by splitting the dough in half.
Plus, you don’t have to wait 40-45 minutes for them to bake. Simply pop into the microwave, and 2 minutes later you are all done!
Delicious AND easy to make!
To make these tasty microwave cinnamon rolls, you’ll need coconut flour, a granulated sweetener of choice, xanthan gum, eggs and melted butter or coconut oil. Mix them all together, and you have your dough.
You’ll also need to make the filling. For that, you will need cinnamon, granulated sweetener, vanilla extract and melted coconut oil or butter. Mix them all together, and your filling is all set!
To form the cinnamon roll, you will need to lay out some parchment paper, and form the dough into a thin strip (approximately 1-1/2 inches by 8 inches, by 1/2 inch thick. Spread the filling evenly all along the top of the dough.
Take one end of the parchment paper, and begin rolling the dough to form a spiral shape.
Spray a ramekin with non-stick spray, and gently place the cinnamon roll into it. Microwave for 90 seconds to 2 minutes, depending on the power of your microwave.
If you like, you can make an optional frosting for the top using heavy cream (or coconut milk), cream cheese (or the solid part of a can of coconut milk), some powdered sweetener and a splash of vanilla extract.
Allow cinnamon roll to cool fully before adding frosting.
Can I use almond flour instead of coconut flour?
Yes, you can! I find that substituting 1/4 cup of coconut flour for 1 cup of blanched almond flour works well.
What sweetener do you recommend?
I like pyure stevia blend (which you can easily find in stores), and monk fruit sweetener (harder to find in stores) for low-carb and keto.
For paleo, you can use coconut sugar, which should be easily found in grocery stores.

Ingredients
For Dough
- 1/4 cup coconut flour
- 1 teaspoon granulated sweetener
- 1/8 teaspoon xanthan gum
- 2 large eggs
- 1 teaspoon melted coconut oil or unsalted butter

- 1 teaspoon melted coconut oil or unsalted butter
- 1 tablespoon granulated sweetener
- 1 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
For Optional Frosting
- 1 teaspoon cream cheese (or solid part of canned coconut milk)
- 1 teaspoon heavy cream or liquid coconut milk
- 1 teaspoon powdered sweetener
- splash of vanilla extract
Instructions
- Mix coconut flour, granulated sweetener and xanthan gum in a bowl. Add in eggs and melted coconut oil or unsalted butter and mix until well-combined. Set aside.
- Add melted coconut oil or unsalted butter to a small bowl. Add in granulated sweetener, ground cinnamon and vanilla extract. Mix to combine. Set aside.
- Mix dough one more time, and spread out into a long strip on a piece of parchment paper. You want to form it into a rectangle approximately 1.5 inch by 8 inches, and approximately 1/4 inch thick.
- Spread filling on top of the dough. Slowly roll dough into a spiral shape.
- Spray a ramekin with nonstick spray. Gently place cinnamon roll into ramekin. Place in microwave for 90 seconds to 2 minutes, depending on the power of your microwave. I did 2 minutes in my low-power microwave, and it worked well. Allow to cool for 2-3 minutes before consuming.
- If desired, mix frosting ingredients together in a bowl. Allow to cool fully before adding frosting.
